How to spot value bets in the market?

I was just checking the odds this afternoon and it was confusing. One match was 2.10 here and on another site, it was 1.85. They call it “value bet” but sometimes I feel it's a coded way to trap people. How would you know the real value when they are adjusting numbers differently?
