What are “gas fees” and why do they change so much?

I just tried sending small crypto yesterday and the gas fee almost made me close app immediately, like how fee would cost more than the transaction itself? One minute, fee is low, the next minute, it's high. There is no consistency at all. They said it was a network demand, but why will it fluctuate in that manner?
