Poker can be mentally exhausting, especially during long sessions or when playing multiple tournaments. I find that fatigue can make it harder to stay focused and make good decisions.

How do you recognize when you're getting fatigued at the tables, and what do you do to reset?

Frankly speaking I have never experienced poker fatigue. I guess you experience fatigue if you play a lot, however, I don't play a lot, I play like a couple of times a month. If you are someone who plays a lot, you should play other games or stop playing for something

Fatigue can definitely affect your decisions no doubt. You need to recognize it very early. I deal with this by making sure to take breaks and by drinking enough water.

The thing is to create a Balance. Deal with fatigue by Opting for quality over quantity. You learn how to take breaks. I don't think it is a bad idea eating balanced meals, staying hydrated, or even sleeping to recharge.
