Why do top clubs go for estalbished stars?

I've seen it a couple of times in football where most of the top clubs prefer signing established stars to giving youngsters a chance with the main team. They can spend a lot doing so and in many cases, they are unapologetic about doing it. Why is it like that?
 
The pressure to win in soccer these days doesn't allow teams to gamble with that prospect of giving youngsters a chance that much. However, some exceptional youngsters are given chances by their clubs. Think of Yamal, Saka, Mainoo, Foden and some others that had their big break as youngsters.
 
They are trying to make safe bets. Established stars also means, they are better player and when you have better players on your team, your odds of winning highly increases. You can also get media attention and even sponsorships if you have well known athletes in your team.
